THE BEST POTATOES FOR ROASTING
When it comes to roasting potatoes, there is no need for rocket science. You can essentially use any type of potato you like. Simply because they look good when roasted, I used red-skinned potatoes for this recipe. Use your preferred potato if you choose, though.

Yukon golds are ideal for all applications. My preferred choice for mashed potatoes. They work well when roasted, fried, or blanched as well. Yukon gold potatoes would therefore be my recommendation if you were to choose the ideal potato for roasting.

Russet potatoes are excellent as well, but because of their high starch content, they are even better for frying. Since fingerling potatoes are waxy, they are excellent for boiling or mashing.

WHICH HERBS ARE BEST?
When it comes to herbs for potatoes, the options are virtually endless. Use your preferred herbs, such as rosemary, thyme, or parsley. My preference for dried herbs over fresh is based only on my observation that fresh herbs have a propensity to burn at the high heat of the oven.
But I always go for fresh herbs like parsley as a garnish.

A RECIPE FOR ROASTED POTATOES

Start by chopping up your potatoes. Simply because they look so lovely when roasted and topped with fresh herbs, I decided to use them in this recipe with the skin on. If you decide to keep the skin on, make sure to wash and scrub them thoroughly.

Make sure they are all cut into pieces of the same size when you cut them into cubes. They will cook at the same time if they do this.

Set your oven's temperature to 425 degrees Fahrenheit and cover a sizable baking sheet with parchment paper.

Combine everything thoroughly, making sure to incorporate the olive oil. Roast the potatoes on the baking sheet until they are crispy and fully done.

FOR HOW LONG DOES IT BAKE?

I find that 35 to 45 minutes is typically enough time for the potatoes to be completely cooked and to get them to the level of crispiness I want since we are preheating the oven to 425 F.

Keep in mind that since every oven is different, the amount of time needed will also depend on how big your potato pieces are.

LEFTOVERS

Put the potatoes in a plastic bag or container that can be sealed. For three to five days, keep them in the refrigerator. They can be reheated in the microwave, but the crispiness will be lost. Place them on a baking sheet and reheat in the oven at 425 F for approximately 10 minutes, or until heated through, if you want to retain them crispy.

FREEZING

Potatoes actually freeze well, so you can. To preserve as much air as possible, I prefer to store them in Ziploc bags. They can be kept in an airtight container as well. Potatoes can be kept in the freezer for up to six months if they are properly stored.
