These mashed potatoes are transformed into an outstanding side dish with the addition of some bacon for flavor and a sprinkle of polenta for crunch.
1 tbsp polenta
2 small lemons, thickly sliced
6 garlic cloves, unpeeled
2 rashers thick shortcut bacon, diced
2 tbsp olive oil

Step 1
Oven: Preheat to 200°C/180°F with a fan. Use baking paper to line 2 big baking trays.
Step 2
Put the potatoes in a big pot. Add some cold water on top. Over high heat, bring to a rolling boil. heat to a medium setting. Potatoes should only be slightly soft after 10 to 12 minutes of simmering partially covered. Drain. 5 minutes of standing.
Step 3
Put potatoes on trays that have been prepped. Gently flatten potatoes by applying pressure with a potato masher. Add polenta to the potatoes. Potatoes should be surrounded with lemon slices. Each garlic clove should be slit with a small, sharp knife before being placed on the trays. Oil should be drizzled over the bacon. Add salt and pepper to taste.
