A straightforward, time-tested, and pleasant side dish recipe is buttery potatoes.


These straightforward potatoes with butter take me back to my childhood. For a side dish to meatloaf, chicken, or even her skillet pork chops, Mama would cook these at least once every other week. It was undoubtedly a mainstay. And I was never bored with it. Not in the slightest.

However, there was one aspect of my mother's buttered potatoes that I never relished and found to be extremely tiresome: peeling.

Peeling the potatoes for boiling was always my responsibility. It seemed like I was peeling limitless amounts of potatoes to a young kid. I seemed to be peeling more than I was adding to the pile. The pile never seemed to get any smaller until Mama would arrive with her keen paring knife and peel more potatoes in a few minutes than I had been able to in all the time I had spent working on them. With my fingers still firmly grasping the peeler's handle, I vowed that when I was older, I would only peel as many potatoes as absolutely necessary. I have done everything in my power to uphold that commitment as well.

Buttered potatoes are a straightforward, time-honored, and reassuring side dish recipe.

2 pounds of cleaned and diced red potatoes with 1 tablespoon of olive oil and 1 teaspoon of salt.

4 teaspoons of butter

pepper and salt to taste

Instructions
Put the potatoes in a sizable stockpot and fill them with water. To season the water, mix salt and olive oil together. About 15 minutes after bringing the potatoes to a boil over medium heat, remove the potatoes from the flame.

Drain the water after removing it from the heat. Stir in the butter, salt, and pepper until completely mixed.
