Crispy new potatoes

 fresh potatoes that are fried in browned butter




Ingredients

1kg new potatoes

2 tbsp olive oil

25g unsalted butter

Method

Set the oven to 200°C/fan 180°C/gas 6 before using (see tip). Bring the young potatoes to a boil in a pan of cold, salted water. When the food is barely soft, reduce the heat and simmer for 10 minutes. Drain thoroughly, then place in a roasting pan.

To slightly crush, softly press with a fork. Then, stir with the oil and roast for 20 to 25 minutes, or until golden and crispy, carefully shaking the pan halfway through. In a little saucepan over low heat, melt the unsalted butter. Pour the butter over the potatoes right away after allowing it to bubble until it turns brown and emits a nutty aroma. Serve the lamb seasoned with sea salt.
