BUTTER BROWN POTATOES

"My stepmom's recipe for excellent potatoes with a chewy/crunchy outside and a fluffy interior."

DIRECTIONS
1)    Cut potatoes in half lengthwise after peeling (you only need enough that will fit in the bottom of your baking dish- so start with four and see if you need to peel more to fill the dish).

2)    Put butter or margarine in a 9 x 13 baking dish and preheat the oven to 350 degrees F. Let it melt there. After removing from the oven, thoroughly coat the potatoes (you may have to use a basting brush for this). Place the cut-side-down potatoes on a plate and season with salt and pepper.

 3)    Return the dish to the oven and bake the potatoes for a further 45 to an hour, depending on their thickness, or until they are thoroughly cooked. Halfway through the cooking period, baste the potatoes with the melted butter in the bottom of the dish for optimal results.

 4)     It should be noted that you may easily make this side dish while baking something between 325 and 375 degrees Fahrenheit by just adjusting the cooking time.
