Bites of Whole30 Potato
These are excellent to eat either on their own or with a meal. They taste fantastic dipped in my Whole30 Ketchup or eaten straight out of the oven with nothing else on them.
The ingredients for these Whole30 potato snacks are minimal. You can use any variety of potatoes you like. I made mine with russet potatoes, but sweet potatoes would definitely benefit greatly from this. Then, the remaining two ingredients are clarified butter and dry Italian seasoning (Ghee). If you'd like, you can add a little salt.

Ingredients
1 medium or small potato
Dried Italian seasoning, 1 teaspoon
Clarified Butter Ghee, 3 tablespoons
without salt
Instructions
Set oven to 350 degrees.
Potatoes should be cut into small cubes.
Melt the butter in a microwave-safe dish for 45 seconds.
Butter and seasoning should be combined.
Apply the butter mixture to the potatoes.
Bake potatoes for 12 minutes on a cookie sheet.
Bake potatoes for a further 12 minutes on the other side.
Add a little salt if you'd like, then relish!
