BAKED POTATO HOME FRIES IN DINER STYLE

Every time they made baked potatoes, they always made extra so they could use them for home fries the following morning. Wash potatoes thoroughly and pierce with a fork. Bake potatoes in the microwave until done.
Potatoes should be thinly sliced. On medium heat, combine onions and butter in a large skillet and sauté until transparent.
Once the potatoes are added, keep cooking them until the sides are golden. Some of my potatoes should be a little crispy. Add salt and pepper to taste.
Additionally, this is a fantastic way to utilize leftover baked potatoes. The potatoes could also be given some chopped green pepper. Green peppers should be cooked with the onions before the potatoes if you choose to add them.
